Currently only a handful of food crops feed vast majority of world's population. The biggest hurdle in achieving the targets of global food security other than ever-increasing population is the alarmingly shrinking food crop base. The study provided significant implications for restaurant operators in the U.S during the reopening period. ![]() Positive COO effect moderated the relationship between perceived importance of preventive measures and brand trust. Moreover, both perceived importance of preventive measures and dining involvement could enhance customers’ intention to dine out indirectly via brand trust. The results indicated that dining involvement had a direct positive effect on customers’ intention to dine out. Structural equation modeling was used for data analyses. restaurant customers recruited via a market research company completed the online survey. Additionally, the study investigated the moderating role of country-of-origin (COO) effect on these relationships. This study examined the interplay of perceived importance of preventive measures, dining involvement, brand trust, and customers’ intention to dine out at American Chinese restaurants during the reopening period. Also, as an imagined authentic Chinese dish, it represented a type of affordable exoticism in the eyes of American consumers, meeting not only American tastes but also their social expectations of Chinese culture.ĬOVID-19 pandemic negatively affected the restaurant industry and reopening provides restaurants an opportunity to survive this crisis. Chop suey generated numerous jobs for Chinese immigrants and established a culinary bond between Chinese food and American customers. By appealing to a wide range of American diners, chop suey eventually evolved into a popular American ethnic food and a central component in the culinary identity of Chinese restaurants. While Chinese restaurants helped shape the American diet, Chinese food was at the same time being shaped and transformed by American popular taste. The dynamic interaction between Chinese food and American customers functioned as a complex cultural negotiation.
